Raspberry Recipes: Lolly, Vinegar, Ripple & Flan. I love raspberries and these are some of my favourite summer raspberry recipes. Raspberry yogurt ice lollies, raspberry vinegar, raspberry ripple ice cream and raspberry sponge flan.
Raspberry Yogurt Lolly
Mash raspberries and water, then sieve
Stir in yogurt.
Chill in lolly moulds for at least 4 hours
Soak raspberries in white wine vinegar for a week.
Sieve and pour into bottle
Raspberry Ripple Ice Cream
Basic custard - 4 egg yolks, 90g sugar, 300ml cream, 300ml milk, dash of vanilla extract
Heat milk and cream
Whisk sugar and eggs with vanilla
Add milk to egg mixture
Return to heat until thickened
Chill custard in fridge
Once chilled churn into vanilla ice cream
Heat sugar and raspberries until thick, then sieve.
Chill then swirl through vanilla ice cream.
Return rippled ice cream to freezer for a couple of hours.
Basic Sponge - 100g sugar, 100g butter, 100g self raising flour
Cream butter, sugar and egg
Add flour and whisk
Put batter into greased flan pan
Bake at 150c for 18 mins
Fill base with fresh raspberries
Blitz raspberries and 100 ml water then sieve.
Add quick gel to 200ml water
Add pureed raspberries and sugar
Heat until thick
Pour over raspberries
Chill then cover with cream
