Gluten-Free Quinoa Protein Cookies
This is a super easy 10 minute recipe that can be eaten immediately, refrigerated or frozen for use later or even taken to a family party.
½ cup quinoa flour
2 scoops Organifi Complete Protein
2 eggs (vegan option: 1 tbsp flax seeds w/2 tbsp water)
½ cup coconut oil
¼ cup coconut sugar
Pinch of himalayan sea salt
Pinch of baking soda
Whisk all ingredients together.
If mixture is too thick, add a little water until you reach desired consistency.
Roll them into balls
Plop onto baking sheet
Bake at 325 for 10 minutes
